Sushi Hoshiyama, which received a Michelin star in 2016, has been well-received by many customers for many years. Many new customers visit, and there are also quite a few long-time regulars. Chef Hoshiyama, who has been studying sushi for 15 years, has adopted the Edomae method to create sushi that perfectly blends with ancient red vinegar. Since there are only 8 seats in the entire restaurant, it is very difficult to reserve a seat, so reservations are essential.

Hoshiyama does not have a set menu; the chef decides and provides the sushi based on the fresh seasonal ingredients of the day. Another highlight here is the dishes in which the sushi is served. The chef collects various forms of special sushi dishes from all over Japan every year, and says that they are selected with a heart full of desire to serve you food.

A Small but Dignified Space

Although it is a small space with only 8 seats, the space has dignity. The seats are divided into seats where you can see the chef cooking and seats where you can see the scenery. It is not possible to select the desired seat separately. If you're lucky, you can see the chef cooking.
