The path of becoming a craftsman with a love for sushi
Chef Shintaro Suzuki
Born in Tokyo. After graduating from high school, I have been working exclusively in the sushi business. After learning the trade at a sushi restaurant in Setagaya, he gained experience at two sushi restaurants and opened the independent Sushi Shin in 2003. We moved to our current store two years ago. He is one of the Living Legend chefs who has achieved the feat of being selected by the Michelin Guide for 6 consecutive years.
Restaurant using the best ingredients
Nishiazabu Sushi Shin always uses only the best ingredients. In the case of sea urchins, we use two types: ‘horse urchin’ from Hokkaido and ‘purple sea urchin’ from Aomori. Depending on the purpose, it is divided into sashimi and sushi, and the philosophy is that everything from space to service is to see customers happy.
In our constant efforts to provide better products, we operate with a spirit of craftsmanship, to the point where we carefully select and present sushi ingredients that do not make a profit.
